RE: Melt In Your Mouth Meat Loaf

I use 1/2 - 3/4 lb. hot breakfast sausage and 1 lb. ground beef. Add the egg and stuffing mix and a little milk or water - Use the rest of the sausage and make a white gravy (like for biscuits and gravy) and serve over the meatloaf. I don't use any cheese or onion soup. I usually don't cook in a meatloaf pan because it is too greasy. Thanks for the suggestion to smoke the meatloaf - I bet that would be very yummy.

In response to those that asked: I do take the meds and that is the one thing I am disappointed about. My doctor, bless his heart, said that my numbers were SO good that he didn't see any reason to change anything!!! You can't win with him. Bad numbers get you on the meds...good numbers keep you on them! I am taking Vytorin 10/40 for the cholesterol. My diet consists of mainly extra virgin olive oil and I usually spray that from a pump up spray bottle. If I must have butter I use Smart Balance Light in both the spray and the tub. My breads are whole grain or whole wheat at the very least. I rarely eat a potato but I do have sweet potatoes every now and then. I eat brown rice instead of white. I have found that cooking it 45 minutes with 2.5 to 1 water to rice instead of 2 to 1 and 25 minutes like white rice makes it almost as tender. I eat a lot of green vegetables...broccoli, brussel sprouts, cabbage, fresh spinach. At least one and usually 2 with every main meal. We have a salad or soup before most meals. Breakfast is almost always a whole grain English muffin, with a spray of butter and sugar free preserves. We eat fish, shellfish, or chicken/turkey for 80% of our meals. I try to have one nice steak a week, or sometimes one hamburger (94/6)on a Natures Own sugar free whole grain bun. Instead of fries I will usually fix oven "fried" zucchini rounds with fat free ranch dressing to dip them in. I do a 45 minute weight lifting routine 3/4 times a week and try to walk at least 30 minutes the other days...I will use the treadmill if the weather is bad. Thanks for posting - sounds like you are pretty disciplined! We do pretty good during the work week, but fall of the wagon many times on the weekends. Best of luck to you with your continued success!

I have made Emeril's recipe a few times and it is pretty good - I would like to try it with REAL Marsala - not the stuff in the vinegar section of the grocery store...I would imagine this would make a huge difference.

Actually I have looked into the Amana Colonies. There is also a campground right along the Coralville reservoir that has been taken over after it was run down into great disrepair. They have done a wonderful job of bringing that tired old campground back to life! Would be great for boating fans and those who just like watching the waves on the lake. I was going to see when the schedule is for the area ski team as they put on quite a show and swing down that direction from Cedar Rapids occasionally. Not far from many other things as well. How far is this from the Chicago area? Might be good for a 4 day weekend - we're always looking for new places to run the boat..

I make mine by creaming 3 sticks of butter with 1/2 cup sugar. I add 3 cups of flour and press into a 9x13 pan. I prick with a fork and cook at 325 degrees for 25 - 30 minutes. You could probably spread some melted chocolate chips on the top and cover with the ground nuts after cooking???

Congratulations! What specifically have you bee doing differently? DH and I have been dieting since the beginning of the year. Both of us have lost a good amount of weight. It will be interesting to see DH's numbers when he goes for his annual check up next month.

Did it drive like that when you test drove it? Really short Class A's are known for poor handling w/o after market modifications -- even then they will not handle all that well. Ditto to this. Our first MH (30' on Workhorse) came with a free allignment - they said that it should be re-alligned once you get it full of all your usual stuff. But, after doing this, changing air pressure, and adding front/rear stabilizer and changing bell cranks, it still did not handle well. We ended up trading it in for a longer/heavier MH which we test drove on the interstate for over an hour before purchasing.

Driving ANYTHING without proper footwear is downright DANGEROUS! Especially socks only! A panic braking situation wearing socks could slip off the brake pedal right onto the accelerator. We were in an accident and I was barefoot as a passenger. I got out of the vehicle and there was broken glass everywhere which I stepped on and cut my feet in several places. Never go barefoot again. I always keep my cell phone on my person as well - everyone elses phones but mine were lost in the collision.

Abel RV in Bartlett has RV storage. We used them while we were adding on to our driveway. You can store short term. They are also a RV dealership. If this is too far for you, I might try other dealerships in the area and ask them if you could pay to keep your RV on their lot for a short time.

Well I disagree on the scrambled eggs. Milk is basically butterfat and water, the butterfat isn't needed IMHO. Its important to hit a hot grill or pan while the water is still homogenized though to get a good fluff. Chili in Texas doesn't generally have beens or tomatoes, but its like comparing BBQ. It all depends on who's making it and where. Milk is a blend of water, lactose, fat, protein and minerals. Eggs do not contain oil. They are mostly protein and quite low in fat. The link was very interesting. Thanks for posting it!

None of the above. What you should do IMHO is rent different rigs for a few trips to find out for yourselves which works best for you. I agree with SCHARLEY Another vote for renting... A few years ago my father just went out and bought a Class A with no prior RVing. He and his wife traveled on several trips and after 7 months decided it was not for them. They ended up selling the rig at a $15K+ loss. I had told him to rent first to see if they like it. Unfortunately, it was an expensive lesson for him. Agree with SCHARLEY - either rent or buy something used and relatively inexpensive. Going to shows and/or looking at other peoples RV's only goes so far. "Getting it right the first time" is also difficult when you don't know what "right" will be for you. You won't know what that will be until you use it for a while and determine what features/floor plans work best for you. New RV's depreciate very quickly....
